These blondes make an excellent dessert. Serve warm with a scoop of ice cream – vanilla or peanut butter. For an american spin serve with rasperry sauce for a pb&j vibe. To add a grown up spin try them with a blackberry and cassis sauce.
I am making no excuses for the ingredients in this recipe. Addmitedly, there is a lot of sugar, butter and chocolatein this recipe, but these are so rich you only need a small portion. Feel free to add your own twist with a sprinkling of raspberries or cherries to cut through the sweetness.
One of the best things about this recipe is that it it is all made in one bowl. The milk, butter and chocolate are melted together to make a runny ganache. The rest of the ingredients are weighed straight into the bowl and given a quick mix.

- 100g Vegan white chocolate
- 100ml Plant milk
- 50g Vegan butter
- 250g Light soft brown sugar
- 200g Spelt flour
- 1/4 tsp sea salt, plus extra for sprinkling
- 1/4 tsp Baking soda
- 1 tsp Vanilla extract
- 50g white chocolate chips
In a microwaveable bowl, measure the chocolate, milk and butter
Microwave in 30 second bursts until the chocolate and butter are melted
Add in the rest of the ingredients and mix until everything is combined
Pour into the prepared tray and bake for 25-30 minutes depending on how gooey you like your blondies
Allow to cool before cutting into 16 potions
